do italians put sugar in espresso ?

briefly: usually, yes.
in my opinion, a really good bar espresso can be enjoyed better without sugar or anything else a small teaspoon ( coffee spoons are smaller than teaspoons ) of sugar is the norm, especially for espresso made with a moka pot.
some prefer brown cane sugar; other prefer regular white sugar;
diabetic people use other kinds of sweeteners ( fructose, saccharine ). nobody uses honey or maple syrup .
